For this curry, freshly toasted spices fill the room with a wonderful aroma, while the ginger, chile and pepper flakes provide heat, but not too much and the coriander and cumin add a pleasurable earthiness. We simmer it all in natural sweet coconut milk, heightened by the soothing starchiness of the sweet potatoes, and the pop of chickpeas finished with a beautiful tang of tamarind and fresh lime juice you can top yourself.
